Kedjenou de poulet is a traditional Ivorian chicken stew that is slow-cooked in its own juices with vegetables and aromatics in a sealed clay pot called a "canari". The name "kedjenou" comes from the Baoulé language, meaning "to shake," which refers to the practice of vigorously shaking the sealed pot to prevent the food from sticking to the bottom without opening it. The resulting dish is a flavorful, tender stew often served with attiéké (a cassava-based side dish) or rice.
